Jibbigo Chinese English Speech Translator (made for iPhone 3GS, 3rd gen. iPod touch or newer)

speak a language you want translated (I use the Mandarin Chinese version), and it converts to text and speaks it back in the desired language, back and forth, so two people can carry on a live conversation. Great for traveling, like a real-time speaking translator. $25 but well worth it for Chinese as it shows pinyin with tones as well as characters.

iThoughtsHD (mindmapping)

great visual mind-mapping tool $10

Jot! Whiteboard

another mind-mapping/ drawing tool that takes text as well as free-hand notes and sketches – free or $5

ArtStudio – Draw and Paint

advanced drawing program, also useful for sketching out apps visually. With more talent than I have, can be used to create extremely detailed art that looks like watercolor, oil painting, etc.

WritePad | Sync Notes with Watch and Cloud

handwritten notes to text, can also input via keyboard $4
